Buttercup squash contains a high amount of soluble and insoluble fiber which improves digestion and regulates bowel movements. It contains a high amount of vitamin A, which helps to improve the immune system and eyesight. It may also help to fight against free radicals.  

Origin and Usage

Buttercup squash was discovered in an experiment at the North Dakota State University Agricultural Experiment station. It was discovered by Dr. Albert F. Yeager. It belongs to the cucurbits family. It has an upside-down acorn shape. It has orange flesh with the dark green outer skin. It has a sweet and nutty flavor. It is used as cooked, used in salads, and soups.

Bonbon F1 and Burgess Buttercup are the varieties of buttercup squash.

Production

Japan and Korea are the largest producers of buttercup squash.
