It is a tiny seed that is similar to the sesame seeds. It has a yellowish color and sweet-nutty flavor. It is used as a food extender, for cookies, and as a side dish with potatoes or polenta. It can also be used in desserts.

Red amaranth, Love-lies bleeding, and Slim amaranth are types of amaranth.

Production

China is the largest producer of amaranth.
