Origin and Usage

Bok choy is native to China near the Delta area. It belongs to the family Mustards. It is a green leafy vegetable. It has a resemblance to Romaine lettuce. A single leaf of it is shaped like a soup spoon. The Chinese uses this vegetable in cooking, frequently used in soups, salads, stir-fries, steamed, buns and dumplings.

Bok Choy has two main types. One is White-stemmed type and the second is Shanghai Bok choy

Production

In 2019 global production was 70.13 million tons. China and India are the largest producers of Bok Choy.
