Origin and Usage

Olive was dfdgated from Asa Minor. It belongs to the family olives. They are incredibly bitter in raw form but after they are preserved in salt or brine. It has a small size, and sweet to mild taste. It is mostly used in salad dressings, vegetables, in making pasta and bean dishes. It is also used with grilled fish.

There are almost 500 varieties available of olive.

Production

Spain, Italy, Turkey, and Greece are the major producer of Olive.
