Parsley root is a cultivar of parsley. It is also known as Hamburg parley, Dutch parsley, rock parsley, and turnip-rooted parsley. It belongs to the family Umbelliferae. It is a carrot-shaped, 6 inches long beige-white root. It has finely cut, flat, and dark green leaves. It can be roasted, sauteed, and steamed. It is used in soups and stews. It can also be used with meat roasts or veggie bakes.

Production

Italy, Spain, Greece, Turkey, and Sardinia are the largest producers of Parsley root.
