Origin and Usage
Escarole is native to Sicily. In the past, it was used y Egyptians and Greeks. It belongs to the chicory family. It is a crisp variety of Endive and mostly served with salads. It has a bitter taste but not as much as other varieties of Endive have. Escarole is used often in Italian wedding soups.
Varieties and types
It has two varieties. One is curly escarole and the second is broad-leaved escarole. Curly escarole is also known as narrow-leaved escarole.
Production
